Cranberry Pecan Muffins with Chocolate Chips
Ingredients:
- 2 1/2 All purpose flour
- 3/4 cups white sugar
- 1/4 tsp cinnamon
- 1 tsp salt
- 3/4 cups dried cranberries
- 1/2 cup roasted pecans
- 1/3 cup semi sweet chocolate chips
- 1 tbs baking powder
- 1 1/2 cups fresh milk ( i used 1% fresh milk)
- 1/3 cup of vegetable oil
- 1 large egg
Instructions:
- Heat the oven to 400° and butter the bottoms only of 12 regular-size or 6 jumbo muffin cups.
- Mix all the dry ingredients on a mixing bowl and stir using wooden spoon or whisk.
- In a separate bowl, mix all the liquid ingredients.
- Pour the liquid mixture in the dry ingredients and blend it to 1 to 2 speed until smooth.
- Spoon the batter into the muffins cups (3/4 full)
- Bake the muffins on the center oven rack 15 to 20 minutes for regular muffins or 20 to 25 minutes for jumbo muffins.
- Serve warm and ENJOY! ;)
- For the left over muffins. You can put them on Ziploc bag and refrigerate.
- When you feel like to eat, just put it in a microwave for 10 seconds.
