Chocolate Chip Muffins




Ingredients:

1 cup All Purpose Flour
1 cup Whole Wheat Flour
2 tbs Sugar
1 tbs Double Acting Baking Powder
1/2 tsp Salt
1 Egg
1 cup Milk
1/4 Vegetable Oil
1 cup Bittersweet Chocolate Chips (I used Ghirardelli 60% Cacao)

Directions:
1. Preheat oven to 400F. With pastry brush grease well twelve 2 1/2 inch muffin-pan cups.
2. In large bowl with fork, mix flour, sugar, baking powder and salt.
3. In small bowl with fork, beat egg slightly, then stir milk and oil into beaten egg.
4. Add egg mixture all at once to flour mixture and add chocolate chips, with spoon stir just until flour is moistened. (Avoid overmixing which causes thoughness; batter should be lumpy.)
5. Spoon batter into greased miffin-pan cups. Wipe pan clean of any spills.
6. Bake muffins 15-20 minutes until they are well risen and golden and toothpick inserted in center of one comes out clean and dry.

hmmm...crispy outside and so soft and moist inside...

Honey Glazed Salmon





Honey Glazed Salmon

Ingredients:

1 pc Fresh Salmon fillet
2 tbs fresh Garlic (crushed)
2 tbs fresh Celery (crushed)
2 tbs fresh Ginger Root (crushed)
1 tbs Honey (or Oyster Sauce optional)
1/8 tsp Ground Black Pepper


Directions:

1. Preheat oven to 350F.
2. Wash and clean the salmon with cold water and wipe excess water on a kitchen towel.
2. Lay the salmon on a baking pan with aluminum foil.
3. Brush with honey or oyster sauce of your choice over the salmon.
4. Sprinkle the crushed garlic, celery and ginger root over and ground black pepper.
5. Cover with aluminum foil and bake for 30 minutes.
