Chocolate Chip Muffins

Chocolate Chip Muffins




Ingredients:

1 cup All Purpose Flour
1 cup Whole Wheat Flour
2 tbs Sugar
1 tbs Double Acting Baking Powder
1/2 tsp Salt
1 Egg
1 cup Milk
1/4 Vegetable Oil
1 cup Bittersweet Chocolate Chips (I used Ghirardelli 60% Cacao)

Directions:
1. Preheat oven to 400F. With pastry brush grease well twelve 2 1/2 inch muffin-pan cups.
2. In large bowl with fork, mix flour, sugar, baking powder and salt.
3. In small bowl with fork, beat egg slightly, then stir milk and oil into beaten egg.
4. Add egg mixture all at once to flour mixture and add chocolate chips, with spoon stir just until flour is moistened. (Avoid overmixing which causes thoughness; batter should be lumpy.)
5. Spoon batter into greased miffin-pan cups. Wipe pan clean of any spills.
6. Bake muffins 15-20 minutes until they are well risen and golden and toothpick inserted in center of one comes out clean and dry.

hmmm...crispy outside and so soft and moist inside...

Honey Glazed Salmon





Honey Glazed Salmon

Ingredients:

1 pc Fresh Salmon fillet
2 tbs fresh Garlic (crushed)
2 tbs fresh Celery (crushed)
2 tbs fresh Ginger Root (crushed)
1 tbs Honey (or Oyster Sauce optional)
1/8 tsp Ground Black Pepper


Directions:

1. Preheat oven to 350F.
2. Wash and clean the salmon with cold water and wipe excess water on a kitchen towel.
2. Lay the salmon on a baking pan with aluminum foil.
3. Brush with honey or oyster sauce of your choice over the salmon.
4. Sprinkle the crushed garlic, celery and ginger root over and ground black pepper.
5. Cover with aluminum foil and bake for 30 minutes.

Burong Isda (Sauteed Fermented Fish with Rice)

Ingredients:

4 pcs Fresh Catfish Nuggets
1/2 cup of Rice (I use Botan Rice)
2 tsp Salt
1/3 cup Onion (crushed)
1/4 cup Garlic (crushed)
3 tbsp Ginger Root (crushed)
1 pc large Tomato (chopped)
1 1/2 tbsp of Sinigang Mix
1 tbsp Cooking Oil
1/2 cup water


Directions:

How to make Fermented Fish with Rice:

1. Cook the rice as you normally cooked it.
2. Wash and clean the fish thoroughly and scrub them with 1 tsp of salt.
3. Place the cooked rice on medium bowl and put the other teaspoon of salt and mix.
4. Layer the salted fish on the rice(leave some air on top) in a small glass bottle and close it tightly.
5. Place it on a dry safe place and leave it for 7-10 days.

How to cook:

1. Sauté garlic, ginger root and onion on a medium high heat.
2. Add the tomato and continue to cook for 60 seconds.'
3. Add the Fermented Fish with rice.
4. Add water and let it boil a little and add the sinigang mix for another 30 seconds or so until it cooked just right on your taste.

Serve it with Fried Fish and Steam Veggies you prefer. (Steamed Eggplant and Green Leafy Veggies) ;)

Pesto Tuna Pasta

Pesto Tuna Pasta
Ingredients:

2 cans Flaked Tuna in can
250g Whole Grain Thin Spaghetti Pasta (Cook as directed on the box)
1/2 cup Unsalted Butter
2 pcs Tomato (chopped )
1/2 cup Onion
1/4 cup garlic
Pesto Pasta Sauce Mix
Italian Seasoning


Directions:

1. Heat the butter in skillet over medium heat. Add garlic and onions and sauté 3-4 minutes.
2. Add the Tuna and stir for 30 seconds.
3. Mix the Tomato(you can used also cherry tomatoes) and sauteed ingredients on cooked spaghetti.

Note:
You can add additonal veggies like mushrooms if desired.

Soft and Chewy Double Chocolate Cookies



Ingredients:


1 cup unsalted butter
2 cups sugar (1 cup brown and 1 cup white)
2 large eggs
2 teaspoons vanilla
2 cups whole wheat flour
3/4 cup cocoa
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup semisweet chocolate chips
1/2 cup bittersweet chocolate chips


Directions:

1 Mix together the butter, sugar, then add the eggs and vanilla.
2 Blend in the cocoa and add baking soda, salt and blend well.
3 Add the flour into the creamed mixture and fold in the chocolate chips.
4 Bake at 350° for10 minutes.

Serve and enjoy! ;)
